In a bowl, mix together the garlic puree, ginger puree, turmeric, curry powder and chilli powder (if using) with a splash of water to make a paste; Fry the onions in a pan over medium heat until they begin to turn golden; Add the spice paste to the onions and stir fry for a couple of minutes; Add the king prawns and cook until they begin to. As the onions are frying, in a separate bowl mix together the garlic puree, ginger puree, turmeric, chilli powder and curry powder with a little water to make a paste. In a wok, heat oil over medium high heat, and then add the garlic, curry leaf and cili padi. When the coconut cream splits (the oil and solids separate), add the curry paste.
